President Chen obtained PhD in 1999 at Kaohsiung Medical University. Currently teaches in Fooyin University, as most young is also the most senior professors and deans. The past 20 years, he has his scientific interests focused on life-threatening diseases, including traditional Chinese medicine used for cancer research. Analysis in recent year’s major active ingredients such as ginger, pepper and cinnamon used in gastrointestinal cancer, anti-inflammatory, antioxidant, antiparasitic, and other topics. President Chen specializes in isolation, purification and structural analysis of active components of plants. President Chen directed against active constituents of oral cancer, liver cancer, and rectal cancer. President Chen was just over 45 years old, but his work has more than 220 papers, Taiwan one of the young talents. Professor Chen was invited more than 250 kinds of Journal editorial boards. Professor Chen won numerous awards at home and abroad, from 2015, was awarded the lifetime achievement award; from 2016 was awarded the health care & biotechnology merit award; from 2017 was awarded the nation academic award.

Bing-Huei Chen, male, food scientist, received his Ph.D. degree in Food Science & Technology, Texas A & M University, USA in 1988. His postgraduate career includes working at Fu Jen University, Taipei, Taiwan as Associate Professor from 1988–1994, Professor from 1994–2000, Distinguished Chair Professor from 2004–present, Chair of Department of Nutrition and Food Science from 1994-2000, Director of Graduate Institute of Medicine from 2006–2009, and Dean of College of Human Ecology from 2012–2015. Until now he has published 179 research articles in internationally renowned journals and authored 11 book chapters in edited books published by International Publishers. He has been honored with a young scientist award and outstanding research award by the Taiwan Association of Food Science & Technology in 1993 & 2000, respectively; outstanding research award by National Science Council, Taiwan in 1993 & 1998; outstanding research award and Chair Professor by Fu Jen University, Taiwan from 2004–present. Professor Stephen S.Chang’s outstanding achievement in food science and technology award in 2016 by Taiwan Association of Food Science and Technology. He also serves as Editor-in-Chief of 2 journals “Recent Patents on Food, Nutrition and Agriculture” and “International Journal of Current Toxins Research” and Taiwan Editor of “Food Quality and Safety” as well as Associate Editor of 2 journals “Journal of Food & Drug Analysis” and “Asian Science Bulletin”. Dr. I-Ju Lai received her B.S. (1993) in food and nutrition from Providence University, Taiwan, M.P.H. (2003) in international health from Oregon State University, U.S.A., and Ph.D. (2006) in public health From Oregon State University, U.S.A. Dr. Lai is an assistant professor in Department of Nutrition at I-Shou University, Taiwan. Before her graduate studies, she had been a registered dietitian and a training manager responsible for continuing education of dietitians. After completion of her doctoral degree, she has contributed her expertise in counseling foodservice hygiene at all levels of schools as well as assisting in the promotion and accreditation of health-promoting school program in Taiwan besides teaching. She has also involved in a number of healthcare-related white paper writing and book chapters in public health nutrition. She has a commitment to health promotion for the people in Taiwan through teaching, researching, and social services. Her current research interest focuses on nutrition literacy.
